草莓大福 Strawberry and Sweet Red Bean Mochi


草莓季節吃草莓,
再加上自制豆沙,
甜而不膩,
以及外層的煙韌口感,好搭配!


材料 Ingredients (做6個份量):

豆沙餡 Red bean paste:
紅豆 Red bean-70g
冰糖 Crystal sugar-30g
水 Water-1500ml

糯米團 Mochi dough:
糯米粉 Glutinous rice flour-100g
糖 Sugar-30g
水 Water-110ml

內餡 Filling:
草莓 Medium size strawberry-6粒

外層 Covering:
片粟粉/炒熟糯米粉 Katakuriko starch powder-適量

做法 Method:

豆沙餡 Red bean paste:


1.紅豆先用水浸過夜
Rinse the red beans and soak with water overnight

2.在鍋中把水煮滾,放入紅豆,用大火煮約20分鐘
Combine red beans and water in a pot and cook for about 20 minutes in high heat


3.轉細火煮至差不多收水就加入冰糖,煮直至收乾水成豆沙
Add crystal sugar until most of the water has evaporated and cook until the paste becomes very thick in medium low heat

糯米團 Mochi dough:


1.把糯米粉,糖,水混合
Mix glutinous rice flour, sugar and water

2.在鍋中把水煮滾,把糯米粉糊蒸約15分鐘至熟透
Steam the mochi dough for 15 minutes

內餡 Filling:

1.把草莓洗淨,去蒂
Rinse the strawberries with water and remove the hulls

組合 Combination:




1.把豆沙攤涼,分成6份,每份約25g
Divide red bean paste into 6 potion for about 25g each

2.把糯米團攤涼,分成6份,每份約35g
Divide glutinous rice paste into 6 potion for about 35g each


3. 把草莓包在紅豆餡內
Coat strawberry with red bean paste


4. 再包上糯米團及沾上片粟粉或炒熟糯米粉就完成
Wrap strawberry red bean paste with glutinous rice flour and cover with  Katakuriko starch powder

5. 重覆1-4的步驟6次
Repeat steps 1-4 for 5 times
