抹茶紅豆吐司 Matcha and Honey Red Bean Loaf


這吐司配合了紅豆的甜蜜和抺茶的香氣,鬆軟好吃!

The combinations of red bean and green tea are always perfect match,

and it is delicious for making loaf with soft texture!

材料 Ingredients:

A. 麵團部分 Main dough:

高筯麵粉 Bread Flour-300g

牛奶 Milk-200ml

糖 Sugar-30g

酵母 Instant dry yeast-4 g

鹽 Salt-1/4tsp

無鹽牛油 Unsalted butter-15g


B. 抹茶部分 Matcha Dough:

抹茶粉 Matcha powder-5g

水 Water-10ml


C. 內餡 Fillings:

蜜紅豆 Honey Red Bean-100g

做法 Procedures:


把所有材料混合,揉成粗糙的麵團,分成2等份,每份約290g

Combine all ingredients of main dough (except butter) to form rough dough and then divide into two portions with 290g each.


把其中一份揉至不沾手,加入一半牛油

Take one portion of dough and knead until the dough is not stick to the hands and add half of the unsalted butter


揉至光滑及有薄膜

Knead well until dough is smooth and can be stretched to a thin membrane


滾圓,放進已掃油的麵盤發酵1小時至麵團兩倍發大

Roll round the dough and put it into a bowl that spread with a layer of oil. Cover the bowl with cling film and leave it at room temperature for an hour until the dough expands 2 times 


另一份麵團加入抹茶部分材料,揉至不沾手後加入另一半的牛油,揉至有薄膜

Repeat the steps above to prepare for the matcha dough by combining the ingredients of match dough and another portion of the rough dough


滾圓,放進已掃油的麵盤發酵1小時

Roll round and put it into a bowl that spread with a layer of oil. Cover the bowl with cling film and leave it at room temperature for an hour until the dough expands 2 times


發酵至原本的兩倍大

The dough expands 2 times


發酵完成後用手指按壓麵團排氣,然後把兩種麵團各分成3等份,每份約95g,滾圓,鬆弛發酵15分鐘

Punch down the dough to release air pockets. Divide into 3 equal pieces with 95g each for both plain dough and matcha dough . Roll round each and rest for 15 minutes.


用桿麵棍把每份麵團滾長,按壓周邊氣孔排氣

Roll each dough out into a rectangle


從上而下捲起,發酵15分鐘

Roll up the dough into a long log, leave it to rise for 15 minutes

 

把每份麵團都用桿麵棍滾平,取一份綠茶麵團疊在一份原味麵團上

Roll each dough flat and put one piece of green tea dough on the top of one piece of plain dough


放上蜜紅豆

Add honey red bean


把麵團捲起

Roll up the dough into a long log



輕輕的把末端及兩端捏起來

Pinch the seam to secure


重覆動作做多2次,把3份麵團放入已掃油的吐司模內,發酵約30分鐘至8成滿

Repeat the steps above for the other dough and put it into a loaf tin that spread with a layer of oil. Leave it to proof for about 30 Minutes until the dough fills up to 80%of the loaf tin


烤箱預熱至180,烤30分鐘,攤涼後把吐司切成一片片

Bake in a preheated oven at 180℃ for 30 minutes
