銅鑼燒是傳統的日式甜品
用燒餅夾著紅豆蓉
是多啦A夢的最愛
也很適合用來做下午茶 :-)
材料 Ingredients :
A. 紅豆餡 Red bean paste:
紅豆-60 g/ red bean-60 g
水-1800 ml/ Water-1800 ml
冰糖-30 g/ Crystal sugar- 30 g
B. 煎餅 Pancake:
雞蛋-2隻 /Eggs-2
低筯麵粉-110 g /Cake flour-110 g
奶粉-20 g / Milk Powder-20 g
牛奶-50 ml/ Milk-50ml
砂糖-15g /Granulated sugar-15g
蜜糖-1湯匙/ Honey-1 tbsp
無鋁泡打粉-1/2茶匙/ Aluminium-free baking powder-1/2tsp
做法 Procedures:
A. 紅豆餡 Red bean paste:
紅豆用水浸8小時或以上,
在鍋中加水及紅豆,
用大火煮至水沸騰後轉小火,
慢火煮約1小時,加入冰糖,煮至收乾水及成紅豆蓉
Soak the red beans in water overnight,
Combine red beans and water in a pot and cook for about 20 minutes in high heat,
Add crystal sugar until most of the water has evaporated and cook until the paste becomes very thick

B. 煎餅 Pancake:
雞蛋打勻
In a large bowl, beat the eggs
加入砂糖打勻
Add in granulated sugar and mix well
加入牛奶及蜜糖,拌勻
Mix with milk and honey
篩入低筯麵粉及奶粉,拌勻
Sift cake flour and milk powder into the bowl and mix well
加入無鋁泡打粉打勻,拌勻
Add in aluminium-free baking powder and mix well
用保鮮紙包好混合的粉漿,放到冰箱藏15分鐘
Cover the bowl with plastic food wrap and keep in the fridge to rest for 15 minutes.
把平底鍋燒熱,加入一湯勺的粉漿,用慢火煎至起泡泡便反至另一面
Heat a non-stick frying pan over medium-low heat, pour 1 ladle amount of batter into the pan,
keep pan-frying until the surface of the batter starting to bubble,
then flip over and cook the other side

煎至兩面深啡色
Pan-fry until turns to golden brown in both side
合併 Combines:
取一塊煎餅放上紅豆餡,約30g份量,再放上另一塊煎餅夾起便完成
